I did a time-lapse video like #5 a few years ago at my last employer when they added another building for some new equipment.
Set a camera to take a snapshot once every hour (of course once it was done, I had to edit all the nighttime shots). Once the walls were up, I moved the camera indoors to take in the equipment installation.
At the end, I had about 6 months condensed to 7 minutes.

Great fun, lots of good quality idiots. Among many activities, I do a fair bit of cycling and seeing cyclists behaving like dicks pisses me off. Still, he got his poetic justice.
