The Secret to Good Cornbread

 In this video I share the secret to making good cornbread and talk about the importance of corn in the Appalachian Mountains.

  1. Good to see she did not create an abomination by adding sugar to the cornbread. Sugar belongs in iced tea, not cornbread.

    1. Sugar belongs in a sugar bowl and is best left there. Sweet tea is barbaric.

    3. I have failed my family. They all want sugar in their cornbread. I don't know how that happened! If I take a bite and taste sugar, I'm done! I consider myself a cornbread purist!

  4. Whenever I make Chili (no ground beef here), I make make a great cornbread that has whole corn, chopped green chilies, and a bunch of shredded cheddar cheese in it. It'll knock your socks off!

  5. Of course lard makes the best corn bread. That is not a secret.

    1. I partially disagree. I like lard (I won't allow shortening in my house), but I think bacon grease works better. Makes it a bit 'puffier', if that's a word.
      If I'm low on bacon grease, of course I use lard; as a last resort, butter. I make my loaf bread with lard or bacon grease, too.

    3. Lard and unbolted white meal in a #6 skillet makes the best bread in my opinion.

  6. We use bacon grease instead of lard or vegetable oil in our batter. Same when making pancakes. It ups the game like no other heart attack ingredient.

    1. Indeed. I remember, fondly, the bacon drippings can on my mom's stove. Never really enough added to the batter to be a health risk, but the Lovely Bride's cholesterol increases several points if she just looks a photo of bacon.

  7. only yankees and west coast socialist use sugar ( they sugar everything from beans to cornbread) . Finally good to see a real recipe like mom made. Bacon grease or lard only.

  9. I remember my grandmothers corn bread. she used either bacon grease or lard in it.
    she always had bacon grease on her stove, staying warm for things.
    and she was a ky hillbilly girl. every morning we had bacon and eggs with corn bread.
    sometimes grits as well. anyone else remember black sop gravy ?

  10. Have to admit that’s how my Great Grandmother and my mom have always made cornbread.

    I subscribe to another site on utoob called Early American and they have a lot of really old recipes before modern conveniences and they recently did one on cornbread.

  11. Man, I would love to be invited to supper or Sunday dinner at her house. I bet that is some of the finest vittles this side of heaven.
    Just from listening to her talk you know she can cook.
