Sarah Dobson, who is married to the owner of Dobson Farms told News 2 the more than 300 crates of kale were meant for a salad-making company in Smyrna, but when they arrived, they were turned away because of the temperature.
“We got a phone call from a semi-truck driver who said he had about 11 to 13 palettes that were rejected because they were about two degrees too cold,” Dobson said.

ReplyDeleteAnyways, temp of produce upon receipt is very important actually. Affects shelf life, etc., but from a liability standpoint, I have had customers kick an order back b/c the reefer unit on the truck wasn't cold enough. Its a part of the business - sometimes one company's product is not up to snuff and rejected at the loading dock. It happens. With something perishable like produce, whatchagonnado?
During the rona, I literally delivered pallets of produce to the knoxville zoo - we were under contract to purchase XX cases of romaine lettuce per week all year long, regardless of the rona... so the elephants and giraffes ate really well for a month there.
Always serve kale with plenty of olive oil…….

As much as everybody else seems to hate kale, I think it makes a great side dish. Strip out the ribs, tear the leaves into strips, and pan sauté in bacon drippings until it just starts to wilt down, then hit it with a dose of hot pepper vinegar.

ReplyDeleteI'd be canning a hell of alot of it if I could have gotten some. Eat it like Uchuck said, or boil it and then eat it like spinach, with apple cider vinegar, some corn bread, salt bacon, a couple other dishes. MMMM!
