If its magnetic and holds the blade to that surface, I don;t think the blade depth would matter, as long as sharpened edge is over top allowing round honer to roll by.
One thing all sharp knives have in common is none of them have had me try to sharpen them. There are a few things I do well. Knife sharpening isn’t one of them.

DeleteThe botton unglazed rim of a ceramic coffee cup is amazing for knife sharpening.
DeleteThe top edge of a car window will also work in a pinch.

#4 - I've got my Japanese water stone (1000/6000 grit) and it's hard to keep a 20° angle. That looks really cool!
