ReplyDeleteI don't get crawfish. Maybe it's because I'm from up North. I bought a bunch of them a few years ago, and just sat there looking at them. Like mouse-milking, it seems like a lot of work for a very small reward. Somebody straighten me out. What am I doing wrong?

DeleteRule of thumb is 5# of crawfish per person, this will yield about 1# of meat. Seasoned up right with potatoes, corn, sausage and mushrooms makes some mighty fine eating......

I think it's mainly the drinking that goes along with eating crawfish. Like the bartender putting out salted nuts so customers get thirsty and drink more, the crawfish are spicy and tends to get people guzzling beer. Dixie beer. At restaurants there Dixie is listed under the "imported beer" section of the menu. No shit. I teased waitresses endlessly about it. Plus eating crawfish got that tequila thing too, you know, lick the salt, take the shot, bite the lemon? Well, pinch the head, suck the juices, eat the tail.
DeleteBut yeah, as to regular food when you're hungry? Hard pass. I think of them as more of an appetizer.
You just have to get efficient at eating them. I used to cook them in college as a part-time job. Not much on eating them anymore because I used to have to eat them while I was cooking them same reason I won’t eat at McDonald’s anymore. I work there in high school. Ate too much of the food. My best friend owns a crawfish farm. I’ll get them cheap as shit and I still don’t eat them very often. You feel the same way about crawfish that I do about crabs. Too much work too little yield
DeleteOur neighbor had their first of the year boils and the crawfish were small. I personally don’t care too much for the things but the potatoes, corn and sausage are pretty tasty.

Man, when I lived in Houston, mud bugs became an annual party. My BIL would go to Louisiana and pick up a couple of huge bags. We would fire up the propane burner, line the table with newspaper, purge the crawfish, boil them bad boys up, serve them with copious quantities of cocktail sauce, lemon, and margaritas. Do that with a dozen or so good friends. Woo hoo!
