They were used to communicate orders to the troops because shouting couldn't be heard over the din of battle. There was an identifiable cadence associated with each standard order, and the officer used the drummer in the way that radio is used today.
In those days, the musicians marched and the Generals led the charge. Now the Generals lead from the seat of they're pants. Order the Generals in front and the Pentagon would re think wars.

Drums, fife, pipes, bugles, etc All could also be used to pass signals to the massed troops - advance, retreat, charge, etc.
