    1. i build stuff like that all day long. After over 40 years of being a machinist, it isnt work, its just a way of life. My favorite stuff to work on was drawbridges, you would be amazed at what goes on that make them move.

    Why in the hell do they cook that Butt so long.
    That's disgusting.
    It should be stopped just at the point where it holds together when slicing.
    That's when it still has enough moisture so that you don't have to slather it with sauce.

    1. I take it you're not a big fan of pulled pork then?
      Look at the steam coming off of it - there's plenty of moisture in it.

    2. Cooking Butt that long destroys the stringy filaments and melts out a lot of the fat and gristle. Otherwise it would be pretty much full of fatty blobs and chunks of the aforementioned gristle.

      It's why you do that to a lot of tough meats. Breaks down connective tissue, renders the fat yada yada.

      Now for something good, go try boiled beef tongue. Where you parboil it, peel it, then boil it again for a long long time.

      Cheap meats, it's what you have to do to them to make them delicious.
