I think it has something to do with getting the big part of the shell into a uniform shape. Notice that that part of the shell is being carefully saved, probably to be filled with something and served.
#1 Flame throwers were part of my MOS. I was trained to wet down first then light it up. Of course I never saw or used one after training. My zippo worked just fine for the type a burning I did.
