Long before his Youtube stardom and appearances on celebrity cooking shows, Kent Rollins worked the land in Hollis, Oklahoma as a rancher, cook, and poet. Oklahoma's PBS station, OETA, featured him in 2001.
I've met him a couple of times, and I do use his recipes. He is easy to talk to, and a truly humble man who understands exactly how lucky he is. And he IS a fount of history for chuckwagons and cooking cowcamp style!
When I discovered that I could cast videos from my phone to the galley TV, once we got tired of eating dinner and watching people being hit in the crotch with random objects, Coyboy Kent's Youtube channel became our go-to food pornography between meals. We have both his cookbooks and his spices too in the racks.
I enjoyed this. Not a damn thing wrong with old school. I like the poems. He writes about what he lives, sees, smells, hears, feels and touches. He does not read it out of a book.
I emailed him a few years ago. Told him as a vet I appreciated his honoring our flag and country, at the end of each video. He wrote me back the next day. Good guy, and very funny.
This guy is legit, have one of his cookbooks and have used many of his recipes. Hybo
