CHICAGO - A former employee of a popular Chicago restaurant claims he was wrongfully fired after recording what he felt were unsafe conditions in the kitchen.
A former server at Hugo's Frog Bar on Rush Street in the Gold Coast claims that he and other employees raised health concerns last month when he says there was a drain backup during business hours that led to sewage entering the kitchen.
In my days as a service plumber drain stoppages were a big part of my work. I've unstopped more drains in restaurant kitchens than I care to remember. Kitchens drains are not directly connected to the sanitary sewer. They go to a grease trap first. It is impossible for shit water or turds to get into a commercial kitchen drain. When kitchen drains back up it stinks like hell and most people think it's shit, but it isn't shit. That's not to say there isn't a health hazard associated with it. Grease traps are breeding grounds for hepatitis.
"Hugo's Frog Bar". The name itself might be a red light. However, in exposing shit in the place, the fired dude is now eligible to join the "Washington D.C. Whistleblower's Lives Destroyed" club.
