I've been using this: https://youtu.be/uOaE3Do1x7k for many years. It puts a good, usable edge on my knives in seconds. I can achieve similar results with whetstones but seldom find necessary. The small pocket version is in my truck/camp gear for quick touch-ups.
I have a 20 degree block that holds an Arkansas oil stone. It will put a razor edge on with just a few swipes. I also have a 20 degree set of ceramic sticks that will fine tune an edge. If I use my knife I will hit the ceramic sticks a couple of times. I sharpen the kitchen knives every 6 to 8 weeks with the oilstone and daily with the ceramic sticks.
TSPROF Sharpening System. Russian built and bloody expensive. I have the Blitz Pro. It's an exquisite piece of kit, and the best sharpening system I have ever used.
My mama said that I was never the sharpest knife in the drawer....
ReplyDeleteI keep my knives sharp. A dull knife cut you quicker than a sharp one.
ReplyDeleteI keep an old rusty knife around for the criminal element.....
