  5. If you can find these books Pinnacle Jake and We Pointed Them North, Dakota Cowboy and of course Charles Goodnight cowman and plainsman. Fascinating. Pinnacle Jake related his stores to his daughter and she wrote them down. I live in western South Dakota and crisscross these amazing plains.

  9. Good video. One of the best tips I've gotten from him is to put just a tiny bit of water in fried eggs and cover them. I like to let my eggs get a bit browned on the edges then just maybe a quarter tsp of water at the edges of the pan. Cover and the tops steam quick but leave the egg runny. Too much water and the whites get pitted but they are still good.

    1. Doesn't the water cause the grease or butter to spatter?

    2. Yup, it'll jump around so you have to be fast with the cover. I cut down on the amount of grease I use for that reason. Once ya get the cover on the whites cook fast. As a matter of fact I used to at times spoon my grease over the white to cook it. I hate slimy whites and like a runny yoke for toast or biscuit dipping. I use an iron pan and bacon fat. I wonder if you can find the video where Rollins does this. It's just a touch of water not on the eggs but to the sides.

    4. In the past you have indicated you do most or all the cooking. Me too. I know my way around a kitchen and was raised in a bar and restaurant. On the rare occasion my wife and I go out to dine my wife always says, yours is better. I'm the cook and my wife is the baker. She worked in a bakery and construction jobs putting herself through college.

    5. I do a large portion of the cooking but Lisa's is better in my opinion.
      My dad taught me how to cook because while Mom's wasn't bad, it also wasn't great. She didn't know how to use spices.

  10. Interesting. I thought everybody knew the teaspoon of water trick. My gramma taught me that when I was 10.
